Thighs have enough fat under the skin to render and self-baste as they cook, which is why they're nearly impossible to dry out — even a few extra minutes in the basket won't ruin them the way it will a chicken breast. That makes this the recipe to hand a beginner.

- 8 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp dried thyme

- Pat the chicken thighs completely dry — this is the single biggest factor in crispy skin.
- Rub with olive oil, garlic powder, paprika, thyme, salt, and pepper, working some under the skin if you can.
- Preheat the air fryer to 380°F (193°C) for 3 minutes.
- Arrange skin-side up in a single layer. Air fry 22–24 minutes, no flipping needed, until the skin is deeply browned and the internal temp hits 175°F.
- Rest 5 minutes — the skin stays crisper if you don't cover it while resting.
Only have boneless thighs? Cut the time to 15–16 minutes and check for 165°F instead of 175°F.
Skin isn't crisping? Pat drier next time, or add 2–3 more minutes — thicker skin needs longer.
No fresh thyme? Dried thyme works fine here, or swap in Italian seasoning.
Want it spicier? Add ½ tsp cayenne to the rub.
Kantan tip — skip flipping — skin-side up the whole time renders more fat down through the meat and keeps the skin from tearing on turn.
