Pork chops dry out almost as easily as chicken breast, for the same reason: too much heat, too long. The air fryer's speed works in your favor here — a hot, fast cook gets a good crust before the center has time to overcook.

- 4 (1-inch thick) boneless pork chops
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp dried sage
one chop per serving — let them rest before cutting to keep the juices in.
- Pat the pork chops dry and rub with olive oil, garlic powder, paprika, sage, salt, and pepper.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Arrange in a single layer, not touching. Air fry 10–12 minutes, flipping halfway, until they hit 145°F at the thickest point.
- Rest 5 minutes before serving — the internal temp climbs a few more degrees while resting.
Chops are thinner than 1 inch? Cut the time to 7–8 minutes total and check the temperature early.
No fresh sage? Dried thyme or rosemary both pair well with pork.
Want a glaze? Brush with a mix of maple syrup and dijon mustard in the last 2 minutes.
Chops are bone-in? Add 2–3 minutes and check the temperature away from the bone.
Kantan tip — pull them at 145°F, not higher — pork is safe well before it looks "done" the way older recipes suggest, and a few extra minutes is the difference between juicy and chalky.
