Shrimp turns rubbery the second it overcooks, and its narrow window is exactly why the air fryer is so good at it: fast, even heat cooks it through in minutes with no hot pan to babysit. The whole job is seasoning it well, keeping it in a single layer, and pulling it the moment it curls and turns opaque.
- for the shrimp
- 1.5 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 lemon, for serving
makes about 4 servings — great over rice or pasta, in tacos, or on a salad.
- Pat the shrimp completely dry, then toss with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Arrange the shrimp in a single layer, not overlapping. Air fry 6–8 minutes, flipping halfway, until they're pink, opaque, and curled into a loose C.
- Don't wait for a tight O shape — that's overcooked. Pull them as soon as they turn opaque.
- Squeeze lemon over the top and serve right away.
Using frozen shrimp? Thaw and pat very dry first — cooking from frozen releases water that steams them instead of searing.
Want them spicy? Add ½ tsp cayenne or a spoonful of Cajun seasoning to the toss.
No smoked paprika? Regular paprika works, or use Old Bay for a classic seafood-boil flavor.
Making shrimp tacos? Toss the cooked shrimp with lime and cilantro and pile into warm tortillas.
Kantan tip — buy shrimp by count, not just "large" — 21/25 per pound cook in about 7 minutes; smaller shrimp finish faster and overcook in a blink, so check them early.
